Who we are

Originally from South of France, Philippe’s family has been in the hospitality business since 1905. They kept the same hotel-restaurant for 85 years before Philippe decided to move to the USA in 1990. He spent 5 years in New York City working as a chef at the Bar du Theatre, manager at Cafe in Soho and finally with the owners of the Lido and the Casino de Paris at Kaptain Banana, the trendy French cabaret in New York.

In 1995, Philippe moved to Laguna Beach, California where, over the course of 15 years, he worked at Ti Amo, French 75, and finally Ambrosia, where he became the food & beverages director because of his theatrical nature and charisma.

During this same period of time, he began Provence Catering, and word of mouth was quick to spread about his delicious creations.

In 2010, Philippe and his family moved to Boulder, Colorado where he worked as the General Manager of Jill’s Restaurant in the St Julien Hotel & Spa. He let go of the catering business during this time because of the demands of his career.

He retired in September 2025 and has since revived the catering business he started so long ago.
